Spinach Salsa Salad

You guys!  Can I just say you kind of made my day yesterday with all the inquiries and emails about the spinach salsa salad I mentioned. Seriously.  I felt special.  And then I quickly realized you were all going to be highly disappointed when I shared it with you.  I wish I was some amazing chef, but alas, I’m not.  It’s sad.  I come from a long line of amazing cooks and I fall entirely too short.  I never come up with my own recipes and I don’t even like to cook.  Baking is an entirely different story…and yes, baking and cooking are completely different things.  Totally.

Well I don’t want to keep you waiting any longer for this amazing recipe that yours truly created out of thin air.  Thin air I tell you, thin air.  A stroke of genius, if you will.  Now stick with me because it does get complicated.  Do you have a pen and paper handy?  You’ll definitely need to write this all down.  It can’t possibly be committed to memory.

Laura Kelley’s Spinach Salsa Salad

(Individual Serving)

Step 1.  Take 1 cup fresh spinach and 1 cup fresh romaine, chop finely and mix together.

Step 2:  Add 2 tablespoons of your favorite salsa.  My salsa choice is Wholly Salsa…1 tablespoon classic medium and 1 tablespoon classic mild.

Step 3:  Toss together and enjoy.

Wow right?!?!?  I mean, I’m sure your mind has been blown.  This amazing creation came from the fact that I do not like the texture of spinach alone, so I mixed in some crunchy romaine.  And when I met Josh he ate salad without dressing and some things do rub off on you when you’ve been together for over 16 years…so we don’t use dressings, but we adore salsa.

I eat this every day…sometimes twice a day.  I top my hamburgers and turkey burgers with it, I eat it alone, with hummus, turkey and crackers, I put it in my omelets…I eat it with everything.  I have been known to get super crazy and throw in some olives and pickled okra.  Don’t knock it, ’till you try it.

Today’s lunch consisted of the following:

That’s a large dinner plate of 346 calories.  Thank you My Fitness Pal.  Take out the corn tortillas and you’re down to only 206 calories, but today I was digging something crunchy.

I’m totally with you on “baking and cooking are completely different things.” It’s actually why I like cooking better – with cooking I can just throw whatever in there and it usually turns out yummy, but with baking I feel like you have to get it all exactly right or it will flop. Possibly it will still be a yummy flop, but it might not. Maybe I just need to mess around with baking more…
