Oh Happy Day

Blogs feel like a dying breed these days.  Instagram and other forms of social media are eating all the blogs…at least, that’s the word on the inter webs street.  But I just can’t quit this space.  I love coming here and pecking away at these keys sharing all the randomness and mundane which flies around in my head.  Today’s post is a perfect reason for why I love to blog…because sometimes quirky, giddy good news just has to be shared…along with other random thoughts.

First, the reason I could not wait for the littles to go for their nap so I could log on…You guys, it’s practically my public service duty to share the Noonday Happy Day necklace is back.  My all time favorite necklace EVA!!!!!  It’s like the McRib being back, but infinitely times better.  Today was Noonday’s spring launch and when I saw it, I gasped.  Could my eyes be fooling me?!?!?!  No they weren’t.  She’s had some minor changes made, so minor I had to get mine out to compare with the computer picture.  And with those minor changes came a name change.  Head over asap and snag The Sunny Day Necklace now.  If you don’t already have an ambassador put in Ashley Mills…she’s your girl.

For lunch time on Tuesday, Thursday and Fridays I let Amon eat wherever he wants…minus the bathroom…hello.  It’s like his special “Hey, you’re the biggest kid in the house today” treat.  He usually picks the floor, but sometimes he wants right up on the counter to chow down.

Speaking of lunch, oh the humanity, today I ran out of the insanely good spicy avocado dressing I told you about on Monday.  The jar is gone.  Like gone gone.  I scraped every last bit that was left out of the jar and onto my salad today with a small spatula…as to not leave a smidgen behind.  I’m going to make more…today…even with out the yogurt because I have zero.  I’ll report back because I know you won’t be able to sleep easy until I do.

Speaking of Amon.  Today while we were reading for nap I got all teary eyed.  He loves bears and has recently memorized Panda Bear, Panda Bear and now reads it to us.  It is hands down the cutest thing in all the land.  It could quite possibly make Josh Kelley cry and whoa, that’s an accomplishment.  Every time we listen to him say all those words from memory our hearts just soar.  We still remember all of his non-verbal days.  We still remember all those speech therapy appointments and all his hard work.  We do not take for granted some parents will never hear their little ones voices.  We are just crazy grateful for every little mispronounced, speech impediment word he speaks…every last one.  I need to video it and share…you’re day would surely be made.

I missed Waiting Wednesday yesterday so I’m coming in strong today.  This little guy is slaying me.  And he’s a heart warrior so of course I’m even more a mess.  He’s simply precious.  Please join me in praying for his forever family.

His favorite game is Hide and Seek. Josiah has been living with a foster family since he turned one year old.  Josiah has Down Syndrome. His file also indicates a congenital heart defect (PFO). Yesterday I listened to a book as I worked away.  The littles had school and I got down to business.  Key fobs and a 12×12 canvas.  I am taking orders right now, so if you’d like to place one just message me HERE.

Since I create for my job which gets super messy…often making it look like I was recently fingerprinted…I love for my Bible journaling time to be simple.  I use very simple supplies and it’s a lot of no fuss.  I always talk about this in my class because there are so many many amazing supplies out there, but our life feels too chaotic for me to venture into new supplies right now.  One day, maybe, but for right now it’s all about the simplicity for me.

I made Unstuffed Cabbage Rolls for dinner last night and let me tell you…whoa nelly.  Freakin’ delicious.  I laughed in the internet face of the lady who posted it and typed out words “comfort food” underneath it.  What?!?!?!  Cabbage?!?!?!  Comfort food?!?!?!  Whatevs.  And now I am eating my  words because it was so good I went out this morning and got more ground beed to make round numero dos.  Make it and don’t be all judgmental towards the cabbage and the picture of the recipe like I was.

I did tweak the amounts on the ingredient list since I was unsure if we would really like this:  1 lb ground beef, 1 TB olive oil, 1 cup frozen chopped onion (I like things easy), 1/2 tsp minced garlic from jar 🙂 1/3 Large-ish cabbage…because is there really such a thing as a small cabbage…chopped (I’m going to make 2 more batches with my leftover cabbage), 1 can diced tomatoes, 1/2 cup tomato sauce, 1/4 cup water, 1 tsp black pepper and 1 tsp sea salt.  I cooked it as said and it was awesome.

And lastly, could creating stationary be any more fun.  I really don’t think so.  Some super sweet letters are about to be written on these by one super sweet girl.
